what does this mean and how do i use it for my dorf also it says later on about skill wrath i have to use a spear is this any pole or are there spears i need to keep an eye out for.

Crystaliz also known ingame as 'crush' or 'crushing' allows you to take a piece of equipment which is graded (lvl20 would be D grade etc etc) and turn it into that grade crystals. EG you take a bone helmet and crystalize it, it then turns into a set amount of crystals. You then use these crystals for crafting, mostly soul shots. Also they are used to summon servitors like your golem etc.
As for wraith it is used by weapons which are classed as 'pole arm' when you click the weapon it will say its weapon type, if its polearm, wrath can be used, but thats way off so dont worry bowt it.
I did notice that expertise S went to 76. While crystalize and craft did not.

ws's get craft of grade before they can wear it
e.g craft b grade is at 49 while B grade mastery is at 52
basically it means we can craft our own gear by the time we can wear it
craft S was added in c4
if you remeber waaaay back in c3 times S grade mastery was meant to be at 67 or something
that would mean we could prolly craft it at 64 or 66
whats interesting about craft and crystalize for S grade (besides the fact i think craft should be at 72 or 74)
is that we get crystalize S before grade
if you check all crystalize skills before that you can see that we recieve them at that mastery lvl or slightly higher
e.g crystalize A at 62/A mastery at 61

Yes, it allows you to spoil higher level mobs.
Is there any way of knowing how many crystals something will turn into when crushed? Or is that something you just need to remember?
