This question also depends on whether you want to set up for pve or pvp as your main concern. As was said, NM seems to be the best overall tank armor due to the +2 con, sleep/hold resist, +4% patk, and 5% reflect damage with the shield. Alot tanks get DC first because it's still a good tank set but alot easier and cheaper to get.
One of the better setups I've seen for SK a-grade is the one our clan SK uses. NM heavy with a +3 elemental sword that he plans on getting magic power on as soon as we can get the sa crystal for it. This works great for an SK in pvp due to their magic attacks and cubics, it's also pretty good in pve as well. He's used this set to defeat many other classes with the only classes still troubling him being mostly mages and orcs to an extent. Of course these classes trouble everyone lol.

y is that? only time an sk would need a shield is at a raid or maybe a train party. For most parties he doesn't need one, and the extra damage is nice.

I don't see the problem of a SK using a 2 handed sword, as long as your not the tank you don't really need the shield anyway.
I'm actually thinking about using a Great Sword instead of a Sword of Damascus at first when I get to B grade, since it cost half the adena. But I won't be a tank more of a DD with my build, so it shouldn't be a problem.
Every1 who is a melee has a SE to buff VR in PvE, so going Dragon Slayer is definatly the best option, they can get very nice p atk and atk speed in tallum and can still tank because of VR constantly keeping HP at max. And then if they lose agro they can send out hate, perfect tank imo, not to mention those cubics...o.O!
