Echo crystals are used to make music. You can double click them to use them this way. You can sell them, if anyone is buying.

The dwarven items come as base-mats (materials used to make many different things) and key-mats (used to make specific things.) Base mats are good to keep. Don't sell them to NPCs or player's buy-shops in the starting villages (they don't pay enough.) Sell them in Giran or Dion, or keep them for when you need to craft your own gear.

Key mats for NG and non-set D grade gear is usually not worth saving or using. With today's material prices (high) it is cheaper to just buy the item in the NPC store than it would be to craft it from mats. You are probably better off selling those key mats to the NPC.

Key mats for D grade drop/craft only items are different, those are valuable and should be saved. Mats for Elven Mithril Gloves, Brigandine Helmet and Shield, 'Plate' anything, and Manticore Skin Boots should be saved.

Although only dwarves can craft non-'common' items (most items) you can use their craft shops to do it yourself. For that, you need to have the materials in your inventory, so that is why you are better off saving the materials.
