Spoiler and SE for sure.
You want the SE's buffs and recharge. If you didnt have the recharge youd have to always stop spoiling cause youd be low on mana. You also want to seed.
You probably want to spoil mobs thats give mats that on demand atm andf have crazy prices. That can be SOP, Varnish, Bone.... whatever. depending on your sever.
As for level range , Id suggest to level your dorf/SE to around lvl 30, get their skills (make sure you have recharge), and deleveled to 20. Have fun in NOS seeding/spoiling. In the higher level rooms you will have low D grade spoils. Craft those and crsyatlize.
If you do that you will get:
1- Mats from spoils
2- Tons on mats from manor that you can keep/re-sell
3- Tons of dirt cheap D crystals you can sell for profit
IMO this is the best way to get a cash income without having to level a dorf and SE to very high levels. Instead of deleveling the toons over an over you can always deceide to level them up while seeding/spoiling and move to higher level mobs. But honestly, if you stick to low level mobs you will kill alot faster, and frankly, the seeding is whats gonna give you most of your cash, the spoiling pays for your seeds and a bit extra.
EDIT: On second though dont delevel the SE. Have the SE in the same party as the low level dorf. Spoils and seeding are not affected by another high level in the group... as long as the lwo level spoils/seeds. Before you know if, youll have a lvl 50 SE with a dorf that stays in the 20-30 range.
Artisan+SE can also do well if you can get some good recipes. Artisans don't make great sums of money until very high level though, whereas BH's can spoil great basic mats up to level 60. Whichever you use (BH or arti), use a pole-arm to maximize ss usage efficiency.

If you get a dorf at keep it in the lvl 20-30 range with top D equipment and a SE behind him, you dont need SS. My friend does this and his lvl 25-30 dorf can clean entire back rooms of NOS without any use of SS. You dont need the SS if you follow my suggestion.
I make money by way of Scav and SE. My SE is almost 52 and I keep my Scav at 32-37 and delevel. There are many places you can go, but I find that Patriots is a great place to spoil lots of varnish and other stuff. I don't have to use SS, but it helps kill faster. Faster=more spoils. I can pull easily 1 mil a day this way.
Edit: And I don't tend to use a pole because I'm just not coordinated enough to dig through the bodies to sweep them, but it can be done. I completely disagree with crafting D grade to make crystals. It's far cheaper on my server to buy D grade from the vendor and crush it instead.

Using base mats to craft DG is a waste. The mats are worth way too much to do that.
By the way to OP, it doesn't really matter what class you play if you do the manor system. Any class + a healer does great. I am amazed at the number of people who just grumble and won't try the manor system until pushed to do so and then they are like "Wow, I'm making a [censored] of money!"

And to clarify: Any single target melee class does well at manoring, that includes buffers and summoners but excludes nukers, archers (attack speed too low) and pole classes.
