The colloseum is nothing special as of the next update,and currently just like a bigger arena with resting zones and respawn right at the arena.
The Olympiad Stadium is a place where noblesse status characters participate in 1v1 PvP under specific rules - the only items allowed are standard (not blessed) spiritshots and soulshots, any equipment; the buffs are only some small preset ones (windwalk and haste 1 for melees I think, windwalk 2 and acumen of some level for mages AFAIK) and self buffs.
Noblesse can be reached through a quest to be performed on the subclass, which requires level 75 to complete.
no accumen for the mages, however buff weapons are allowed so some peopel take in multiple buff SA weapons and swap them out as they self buff to get extra buffs that wouldn't normally be allowed.
You can watch Olympiad matches if you talk to Olymopiad manager. You'll see system message every night when competition starts.
On Gustin it usually look like this:
