Personally, If I was considering a sub to just boost my main, I'd choose between a warrior sub (for Chance Haste. An awesome, self propagating skill), a knight sub (to get the trigger mini-UD thing), or a buffer sub for CS. The others aren't nearly as useful.
Of course if you just want to have fun, play whatever you want imo :)
Good choices for Warrior are:
Gladdy. Although a Destro will probably level faster with the right set-up.
Tyrant is good but more expensive and can still be out-performed by a destro, but it's a great sub to have as it's good in pvp.
Destro! My first choice everytime. Get this guy going and you can level quite well even without buffs.
Good Knight choices are:
Pally. They are slow starters but with a great wolf the speed is really quick. When you get high enough, you can lethal undead and angelic Icon works great fantastically well even at level 1. If you have buffs you can also level on deep red mobs with no problems early on. Since there are so many holy-weak mobs in the game, I'd choose pally over DA everytime, especially if you go the lethal route.
DA is also a good choice, naturally.
Good buffer choices are:
BD. Great toon. Can level fast. Is fantastic in parties also.
SWS. Contrary to popular belief this toon is awesome imo. I love sword singers and sometimes even prefer them to BD's. They level slow by themselves but the crit song is fantastic in parties with high crit damage dealers (Soul breakers, Zerkers, Daggers, Tyrants etc). If you have friends, sws is a good choice and is also a great sub for pvp as everyone and their mum is a BD these days.
SE. With a Great wolf, you can play like a summoner, which works fantastically well, as you can buff and heal the monster. you just need haste pots. Even leveling in FoTD is easy (pound for pound one of the best xp spots in the game) as you have solid heals and purify to remove the posion and bleeding. Try to avoid the root mobs as pets seem to get rooted like it's going out of fashion.
You also get Inquisitor which is another option, but there is a lot of down-time which depending on your mood, can suck or be rather awesome. nice thing about subbing a buffer is the role-reversal with friends/clannies you've partied with. Can work very well.
EDIT: Mistake! I knew that didn't look right. SE is classed as a healer. I did actually forget the War Cryer which is a joy to level, and also works great in FoTD. Just perhaps not so great with a wolf at FoTD, but it really doesn't need a wolf.
Don't be fooled by being a buffer! If you have an oop buffer, use it! It then means you can use all your drains and other debuffs as you xp. Soul Cry (the melee boost toggle) gimps mp regen just enough to stop you using spells and skills effectively.
Any enchanter (BD, WC, PP) to get Counter:Lesser Celestial Shield
Then
Any warrior (Glad, GK, Warlord, Spoiler...) to get: Chance: Haste
And
Any warrier again for Greater Resistance to Debuff.

Yep, I forgot about the whole Elf/Dark Elf problem. A shame as the SWS is an awesome toon. Also greater resistance to debuff is currently bugged apparently. Maybe the ywill fix it in CT3.
I already leveled two subs on my ST and got:
Celestial shield - works really good, on pve and pvp
Chance haste - works very good too :)
I'm thinking of 3rd sub - summoner or warrior (random class) on passive focus.
I want to hear your opinion about counter spirit - it removing chance haste when it turning on? (I heard that tank chance UD removing enchanter cele, so asking for these two).
And this summoner counter it is really good for tank or you think passive focus will be better? :)
I'm almost sure that better for me will be focus on passive cause it's always on and I don't need to count on trigger chance to get bonus but I want to hear opinions from you ^^
Cele and Haste is a must for third one there are options depending on how and with whom ur playing, passive focus is nice but if ur full buffed it wont make such a difference. U might wanna try summoning spirit +5% atk.speed/p.atk/m.atk/cast comes handy.
I have chance heal and it works nice. It's affected by empower buff on you and heals around 240 (without emp) - 300 or 400 HP (with emp). Dunno if it crits, but on pvp with pvp enchant on sword, you can survive longer, and if you have cele on it heals you too. ;)
